Deep Fryer Safe Operating Procedure

This Deep Fryer Safe Operating Procedure (SOP) provides a way for your business to outline step-by-step safe processes when operating a deep fryer.

Deep Fryer SOP:

  • Provides instructions on the use of the equipment both prior to and during operation.
  • Ensures workers recognise and manage associated hazards and risks involved.
  • Provides a training document for workers. 

Procedure:

  1. Operate in accordance with manufacturers’ instructions
  2. Wear prescribed PPE
  3. Place pans in fryer body
  4. Place control boxes in position
  5. Place element guards over the element in bottom of each pan
  6. Fill pans, with required amount of oil, refer to manufacturer’s instructions. If adding solid fat to fryer – place it in a basket and lower the basket into the oil
  7. Turn the ON/OFF switch to ON, green pilot light will illuminate
  8. Set to cooking temperature (generally 170 – 180 degrees C), amber light will illuminate. When oil reaches temperature the pilot light will go out
  9. Lower food and utensils into hot oil slowly to reduce the risk of splashing
  10. Keep the temperature of the oil down when fryer is not cooking food
  11. Remove cooked food from the deep fryer using utensils. Allow the cooked food to drain completely before placing it on a plate
